I haven't picked up an instrument in almost thirty years (and even then, my grade school teachers felt my talents were best directed towards playing a triangle) but this video definitely has me buying Garageband on day 1: http://www.apple.com/ipad/guided-tours/#video-garageband

I've read that the original iPad will support it - wonder what kind of performance hit to expect.

This is now available for purchase and it's a blast. Instruments load a bit more slowly on the iPad 1 but it's still seconds (haven't tried the editing features yet). The Smart Instruments have lots of tweaks you can fiddle with and the regular instruments have even more. Even playing (well, goofing around on) a "regular" piano produced listenable results (to my ears anyways :) ).
