Please see the following posts regarding recommended settings. For STBs, it's usually best to let the incoming signal passthrough to the TV, which requires you to enable 480i Standard, 720P and 1080i and "passthrough" in the "set picture format" setting.:

Since you have a plasma, it'd definitely be good to feed 480i to it for the SD channels and have the TV automatically stretch those channels to avoid burn in if you watch a fair bit of SD. The TV will remember the stretch modes for SD and HD inputs separately, so just leave the HD channels "alone". You don't need to stretch the 4:3 upconverts on the HD channels, since that will likely represent a small portion of your viewing and you don't want to leave the TV stretched by accident and miss 33% of the true HD programming when you switch channels. The stretch modes on the STB are usually terrible anyway.
