Specifically, look for a 9.5mm (2-platter) 2.5" drive versus a 12.5mm (3-platter) drive as they will not fit into the PS3 without modification. I was going to get the Seagate Momentus 5400rpm 500gb drive but am now going to get a Samsung Spinpoint M8 5400rpm 1tb drive instead. Either way, with the Thailand flooding and HDD prices skyrocketing, I have put my own upgrade on hold.
[Edit] Looking online, the Spinpoint M8 750gb seems like it has not gone up in price like the others have and may be the ideal purchase right now, costing ~$20 less than either the Seagate or Samsung 500gb model depending where you shop. |

I put a 120GB SSD drive in my original 60GB PS3 (drive was on sale). The only problem I encountered was almost stripping the crappy screws Sony used. I was half convinced they were made of plasticine.
